James Greco is an industry consultant and currently the Chief Operating Officer of Newk’s, a fast casual chain rapidly growing throughout the southern United States. Prior to Newk’s he served as Chief Executive Officer at Sbarro, one of the world’s leading Italian quick service concepts with over 1000 locations in 40 countries. Before joining Sbarro, Mr. Greco partnered with Sun Capital in 2003 to acquire Bruegger’s Enterprises, Inc. and served as Chief Executive Officer until the company was sold in 2011. From 1991 to 2002, Mr. Greco held senior level positions in several middle market food manufacturing companies. He began his career in the practice of law representing real estate and corporate clients.
Mr. Greco is a member of the Connecticut and the Florida Bars and the Palm Beach County Food Bank Board. He has been a member of the Dine Out Board of Share Our Strength, the Board of Directors of the Connecticut Food Bank and the International Dairy Foods Association. He is the author of several articles on management and culture. In 2009, Mr. Greco was named Operator of the Year by Nation’s Restaurant News. He has a B.A. in Economics from Georgetown University and a J.D. from the University of Miami School of Law.
